Souffle

We had another light week with only one demo and one practical because of the holiday on Monday.  In today's practical we made two souffles.  The first was a larger hot souffle with a bit of orange and Cointreau.  We also made a chocolate sauce for it.  The second was a pudding souffle in smaller portions with a very slight lemon flavor and then drizzled a lemon sauce over it.  It is best to eat these right away, so that's what we did.  And they were good!  On their own, the first one tasted better.  It had a nice orange flavor and wasn't too eggy.  But the second one was better with the lemon sauce.

We are definitely getting close to the end of the term.  You can feel it in the air.  Our practical final is one week from today. We had our written exam last week and it went ok. There weren't as many surprises as there were last term, but the short answer questions seemed more time consuming. We won't find out our score until the end of the term.

Today was our last real practical. We just have one full day of workshops the week after the final. Workshops are where the chef is in the kitchen teaching us as we cook instead of up in front of us while we sit there and watch. We will mostly have workshops in Superior. I'm looking forward to this style of teaching.
